Recipe (Re)creation: Crispy Brussels Sprouts + Goat Cheese + Almonds



This recipe was inspired by a dish I always order at Enoteca in Ketchum, Idaho. It tastes like comfort food, but is surprisingly pretty healthy. I prefer to buy shaved brussels sprouts if I can find them. Otherwise, just pulse whole brussels sprouts in a food processor until well shredded. This is a great cold weather side dish that everyone in my family devours. Enjoy!

Serves: 2-4

Ingredients:

  • 1 lb. brussels sprouts
  • 1-2 Tbsp. olive oil
  • goat cheese, crumbled
  • slivered almonds
  • salt, to taste

Directions:

-Preheat oven to 400 degrees F and line a baking sheet with tin foil.
-Place the brussels sprouts on the baking sheet and lightly coat with olive oil.
-Mix around until the brussels sprouts are evenly covered in oil and season with salt.
-Roast the brussels sprouts in the center of the oven for 10 minutes. 
-Remove from oven, stir to redistribute and add a handful of slivered almonds. 
-Return to oven to roast for another 15 minutes. 
-Once the brussels sprout leaves and almonds begin to brown, remove from oven. 
-Toss with a handful of crumbled goat cheese and serve warm.

Restaurant (Re)creation: Kokkari's Watermelon Salad with Pine Nuts, Feta + Basil




This salad is amazingly simple and refreshing (not to mention, BEAUTIFUL). Watermelon is in season right now and this salad is the perfect way to showcase it. Kokkari nailed this recipe with the salty feta, touch of basil and crunchy pine nuts. You can also swap the basil for mint if you prefer. Either way, you can't go wrong!

Serves 6

Ingredients:

  • 2 1/2 lbs watermelon, chilled
  • 1/4 lb Greek feta cheese
  • 2 tablespoons toasted pine nuts
  • 3 fresh basil leaves, torn
  • 1/4 cup extra virgin olive oil
  • Optional- freshly ground pepper

Directions:

-Cut the watermelon into 1-inch cubes and arrange on a serving platter.
-Crumble feta all over the watermelon.
-Sprinkle with pine nuts and torn basil.
-Drizzle with olive oil and top with a twist of freshly ground pepper.
-Serve immediately.

Recipe (Re)creation: Grilled Peach + Prosciutto Pizza









I just took a fabulous cooking class at Sur La Table and we focused specifically on grilled pizzas.  The hands-down winner of the night was a grilled peach and prosciutto pizza.  I ended up eating two of them (yes, two) and was determined to make them at home.  I added mozzarella, caramelized onions and some lightly dressed arugula leaves to the top and had myself a culinary masterpiece.  While we did learn how to make our own dough (I will post this later), it is a little time consuming and must be made a few days in advance, so I used Whole Foods store-bought dough.  The key is the leave it out so it is room temperature when you are ready to start forming the crusts.  That way it will be much easier to work with and you will be much happier with your results.  You don't even have to own a BBQ to make these pizzas- any grill pan or griddle will do!

Serves 1-2

Ingredients:

  • Vegetable oil (for brushing peaches and grill)
  • 1/2 yellow onion, thinly sliced
  • 1 large white peach, pitted and sliced
  • 8 oz. pizza dough, room temperature
  • flour (for forming crusts)
  • 2-3 sliced prosciutto, torn
  • 2-3 oz. fresh mozzarella, torn
  • 1/2 cup arugula
  • 1 3/4 tbsp. extra-virgin olive oil
  • 1 tbsp. balsamic vinegar


Directions:

-Preheat your grill or grill pan over high heat and brush with olive oil.
-Heat a large non-stick skillet and add 1 tbsp olive oil.
-Add the yellow onion slices and cook, stirring occasionally, for 15 minutes.
-Remove the caramelized onions from heat and set aside.
-Next, brush peach slices with oil and place on grill.
-Cook until they develop grill marks, then flip and cook for another 1-2 minutes.
-Carefully remove peaches from grill and set aside for later.
-With floured hands, form the pizza dough into a ball.
-Pinch the dough with your thumbs and forefingers to stretch it out.
-Once it is round and flat, place the dough on a floured surface
-Brush one side with oil and place the oiled side down on the grill.
-Cover, and cook until grill marks appear (about 3 mins).
-Then oil the top and flip again until the other side also has golden grill marks.
-Remove from heat, top with torn mozzarella, prosciutto and peaches.
-Return pizzas to the grill, cover, and cook for another 3-4 minutes.
-Mix the arugula and remaining olive oil and balsamic in a small bowl.
-Top the pizza with caramelized onions and arugula salad.

Restaurant (Re)creation: Contigo's Seared Goat Cheese, Arugula + Strawberry Salad





I live a block away from Contigo and it is one of my absolute favorite spots.  I love that the menu always changes, but many of the standbys stay the same.  One dish that thankfully rarely leaves the menu is the seared Caña de Cabra goat cheese salad.  I love the creaminess of the seared goat cheese, the crunch of the toasts and hazelnuts, and the tangy and sweet salad that lies beneath.  I was lucky enough to come across Brett Emerson's recipe for this salad in the Wall Street Journal.  Now that I have it, I will be making it on a regular basis.  It looks so impressive topped with crispy seared goat cheese and like it came straight down from heaven.  Enjoy!

Serves 2

Ingredients:

  • 4 oz. Caña de Cabra (or other mild, young goat cheese)
  • 4 small 1/4-inch think slices of rustic bread (I use Judy's Lovesticks)
  • 1 1/2 tbsp. olive oil, plus more for brushing toasts
  • kosher salt
  • 1 1/2 tbsp. Sherry vinegar
  • 2 tsp. minced shallot
  • 1 1/2 tbsp. hazelnut oil
  • 1/2 medium fennel bulb, halved lengthwise and thinly slice crosswise
  • 3-4 oz. wild arugula
  • 4 oz. strawberries, stemmed and quartered
  • 1/4 cup roughly chopped toasted hazelnuts
  • 4 basil leaves, roughly torn

Directions:

-Preheat oven to 350 degrees and place bread slices on a baking sheet.
-Brush both sides with olive oil and bake in the oven until golden, about 3 minutes per side.
-Remove from oven, set aside and preheat broiler. 
-Meanwhile, in a small bowl, whisk together the vinegar, shallots and salt.
-Let the shallots macerate for at least 10 minutes.
-Then whisk in the olive oil and hazelnut oil, season with salt, and set aside.
-In a large bowl, toss together the arugula, fennel, strawberries, hazelnuts, and basil.
-Slice the cheese into two rounds and place on top of two toasts each.  
-Place under the broiler and broil until cheese begins to brown, about 2 minutes.
-Toss salad with enough vinaigrette to coat and season with salt.
-Distribute salad onto two plates and place a warm goat cheese toast atop each helping.

Restaurant (Re)creation: SPQR's Gemelli with Green Spring Vegetables, Black Pepper + Ricotta Salata





My husband and I recently had date night at SPQR and I had the most divine dish.  It was a Gemelli pasta with green spring vegetables, mascarpone, black pepper and ricotta salata.  It was fresh and light, yet creamy and totally satisfying.  We both agreed that I ordered the best dish and I promptly devoured it.  Two days later, I decided to try it in my own kitchen.  My neighborhood Whole Foods was fresh out of mascarpone, so I used whole milk ricotta instead.  Otherwise, I tried to stick pretty true to SPQR's preparation.  This meal can be cooked in mere minutes and looks like it came straight from a Michelin star restaurant.  That sounds like a winning combination to me.  Hope you agree!

Serves 4-6

Ingredients:

  • 16 oz. Gemelli pasta
  • 1/2 lb. English peas, shelled
  • 1/4 lb. snow peas, sliced diagonally
  • 8-10 stalks of asparagus, sliced diagonally
  • 1/2 cup whole milk ricotta (or mascarpone)
  • 3-4 tbsp. extra virgin olive oil
  • Kosher salt
  • freshly ground black pepper
  • grated ricotta salata, for finishing

Directions:

-Bring a large pot of salted water to boil.
-Shell the peas, and diagonally slice the snow peas and asparagus in 1/2 inch pieces.
-Add the Gemelli to the boiling water and cook for 2 minutes less than the package suggests.
-Add the peas and asparagus and cook the pasta and vegetables for an additional 2 minutes.
-Remove from heat, drain, and return to the cooking pot.
-Drizzle 3 tbsp. olive oil over the pasta and vegetables and season with salt and ample pepper.
-Scoop in 1/4 cup of ricotta and mix until well distributed.  
-Spoon the pasta onto plates and top with grated ricotta salata and freshly ground black pepper.
-Add a dollop or two of the remaining ricotta to the top of the pasta and enjoy immediately.

Recipe (Re)creation: Roasted Delicata Squash + Kale Salad





This recipe is loosely based on a recipe I came across on 101 Cookbooks.  I loved the idea of slathering the delicata squash in a miso harissa marinade for a little extra flavor.  I used brown miso paste and harissa spices, but you can substitute with white miso, or harissa paste if you can't find those exact ingredients.  I also threw in some pomegranate seeds, toasted pumpkin seeds, and feta to add some creaminess and crunch to the salad.  This is a perfect seasonal salad to add to your fall repertoire.

Serves 2-4

Ingredients:

  • 3/4 lb delicata squash
  • 1/3 cup olive oil
  • 2 tbsp brown miso paste
  • 1 tsp harissa powder
  • 1/2 lemon, juiced
  • 1 bunch dino kale, finely chopped
  • 2 tbsp toasted pumpkins seed
  • 1/4 cup pomegranate seeds
  • 1/4 cup feta

Directions:

-Preheat oven to 400 degrees F and line a baking sheet with tin foil.
-Wash and dry the squash and and cut it in half lengthwise.
-Scoop out the seeds and cut the squash in 1/2 inch moons.
-Place the squash on the foil lined baking sheet.
-Whisk the olive oil, miso and harissa together in a small bowl.
-Scoop 2 tbsp of the miso harissa mixture onto the squash and distribute evenly.
-Bake in the oven for 25-30 minutes, or until cooked through and beginning to brown.
-Meanwhile, add the lemon juice to the miso harissa mixture and whisk.
-Put the finely chopped kale into a large bowl.
-Add the miso harissa dressing and stir until evenly distributed.
-Top with the roasted squash, pomegranate seeds, pumpkin seeds and feta.

Recipe Creation: Balsamic Roasted Butternut Squash + Brussels Sprout Quinoa



Ahhh, fall has arrived and with it, my favorite produce!  I love hearty squashes & root vegetables and I love that all they need is a hot oven and some olive oil for their best flavors to come out.  This dish can be eaten as a main dish since it has the protein rich quinoa, or it can be served as a side.  For me, it is the perfect weeknight meal on a chilly night.  Keep this one bookmarked as a great option for a Thanksgiving side too.

Serves 2 (as a main)
Serves 4-6 (as a side)

Ingredients:

  • 1 lb cubed butternut squash
  • 3/4 lb brussels sprouts, trimmed and halved
  • 1/2 cup dried red or rainbow quinoa
  • 1 cup water
  • 1/3 cup chopped walnuts
  • 1/4 cup dried currants
  • 1/4 cup grated Truffle Pecorino (or Parmesan)
  • 1/3 cup balsamic vinegar
  • 2 tbsp olive oil
  • 1 tbsp honey
  • Salt & pepper

Directions:

-Preheat oven to 450 degree F.
-Line a baking sheet with tin foil and add squash and brussels sprouts.
-Drizzle with olive oil and season with salt and pepper.
-Roast in the oven for about 25 minutes, or until cooked through.
-Meanwhile, heat a saucepan over medium heat and add the water and quinoa.
-Simmer for about 20 minutes, or as directed on the box.
-Whisk together the balsamic, olive oil and honey.
-Transfer the quinoa, squash, and brussels sprouts to a large bowl.
-Toss with the balsamic dressing, currants, and chopped walnuts.
-Liberally sprinkle freshly grated truffle pecorino on top.

Recipe Creation: Parmesan Roasted Asparagus




This tasty dish is the perfect side to any meal.  Its a great go-to when you want something green on your plate and don't feel like a salad.  Adding the parmesan at the end just ups the yum-factor.  Also, don't worry if you can't find Meyer lemons.  They just happen to be my favorites, but any lemon will do the trick.  This dish looks and tastes fancy, but it is oh-so-easy and healthy.  You can even throw a fried egg on top if you want to have it like a true Italian.

Ingredients:

  • 1 bunch asparagus
  • 1 tbsp extra virgin olive oil
  • salt & pepper, to taste
  • 1 Meyer lemon wedge
  • freshly shaved parmesan

Directions:

-Preheat oven to 400 degrees F and line a baking sheet with tin foil.
-Wash and trim the tough bottom ends off the asparagus.
-Place on the baking sheet and toss in olive oil, salt & pepper.
-Roast the asparagus in the oven for 15-20 minutes.
-Quickly remove from oven and sprinkle with shaved parmesan.
-Place the asparagus back in the oven for about 1 minute, or until the cheese has melted.
-Remove the asparagus from the oven and serve with a squeeze of fresh lemon.

Recipe (Re)creation: Manchego + Rosemary Flatbread



This recipe is shockingly easy.  It is the perfect nibble for a cocktail party and it will disappear in minutes. I always think I'm making a lot of them, and then wish I had made more.  They are that good, and that easy.  The key is that you use tortillas for the crust (shhhhh! It's a secret).  Bake them in a hot oven, and "Voila," they are ready for feasting.  Sprinkle with truffle salt for a little extra flair.

Serves 4

Ingredients:

2 Large Tortillas (white or whole wheat)
Shredded Manchego cheese
Truffle salt (optional)
Rosemary sprigs
Olive Oil

Directions:

Preheat oven to 500 degrees F.
Brush tortillas with a little bit of olive oil and place on a baking sheet.
Top with grated manchego cheese and a few leaves of rosemary.
Bake for 3-4 minutes, watching closely.
Remove from oven, sprinkle with truffle salt, cut into wedges.
Serve immediately.

Restaurant (Re)creation: La Ciccia's Spaghetti with Bottarga




La Ciccia is a cozy little Sardinian gem in Noe Valley.  Though it may appear unassuming from the outside, the food will blow you away.  Reservations at La Ciccia are highly coveted and tricky to get, so try for an early or late dinner on a weekday.   If you do have the luck of snagging a resie, you absolutely must get the spaghetti with bottarga.  I was skeptical at first since the thought of salted mullet roe on pasta didn't really appeal to me, but it surprisingly doesn't taste fishy in the slightest.  It actually just adds a unique, salty, and creamy dimension to the spaghetti.  After my first bite, I decided this definitely needed to be added to my (re)creation list.  The most difficult part of making this dish is procuring the bottarga.  I went to numerous gourmet and specialty stores and struck out.  I ended up finding it online, but if you live in San Francisco, you may be able to find it at Lucca in the Marina or at Bi-Rite in the Mission.  Once you get your hands on the bottarga, the rest is a breeze.  Credits go to La Ciccia for sharing this DELICIOUS treat!

Serves 4

Ingredients:

  • 4 tbsp bottarga (grey mullet roe)
  • 1 lb spaghetti
  • 6 tbsp olive oil
  • 1-2 cloves garlic, thinly sliced
  • 1/2 bunch italian parsley, chopped
  • 1 tsp red pepper, crushed
  • salt

Directions:

-Fill a medium pot with water and a sprinkle of salt.
-Bring to a boil and add the spaghetti.
-In a small saucepan, sauté the garlic and crushed red pepper in olive oil over low heat.
-Once the garlic is fragrant, stir in half of the bottarga, and remove from heat.
-When the pasta is cooked al dente, strain, and then add the pasta to the saucepan.
-Mix in the rest of the bottarga with the pasta and sprinkle with parsley.
-Enjoy immediately with a generous glass of Vermentino.

Recipe (Re)creation: Na'ama's Fattoush



This recipe is from Ottolenghi and Tamimi's long-awaited cookbook, Jerusalem.  I never thought I'd say it, but I like this cookbook even more than Ottolenghi's other cookbook, Plenty.  This one features both Jewish and Arab dishes, and there are both vegetarian and meat-laden dishes to keep just about everyone happy.  This fattoush salad reminds me of my trip to Lebanon and fattoush was one of my absolute favorite discoveries from the trip.  This recipe is delicious as is, but I just added a few twists to make it slightly more satisfying.  I used pita instead of naan and I toasted it so that it kept its integrity and didn't get soggy.  I also topped the salad with a little crumbled feta for some added salt and creaminess.  You can serve this salad with some grilled sausage or extra pita and hummus and you are all set for a perfect weeknight meal.

ps. Buy the Jerusalem cookbook- you won't regret it.

Serves 3-4

Ingredients:

  • 3/4 cup Greek yogurt
  • 1/2 cup milk
  • 2 large pitas, toasted
  • 3 large tomatoes, diced
  • 4 radishes, thinly sliced
  • 3 mini cucumbers, peeled and diced
  • 2 green onion, sliced thinly
  • 5 mint leaves
  • 1/2 bunch flat-leaf parsley, chopped
  • 2 cloves garlic
  • 3 tbsp lemon juice
  • 1/4 cup olive oil
  • 2 tbsp white wine vinegar
  • 1 tbsp sumac
  • 1/4 cup crumbled feta (optional)
  • salt & pepper

Directions:

-To make the buttermilk dressing, start 1 hour in advance.
-Whisk the milk and yogurt together in a bowl.
-Set aside, or place in the fridge until bubbles form to the surface.
-Tear the bread into bite-sized pieces and place in a large mixing bowl.
-Add the buttermilk dressing, and all the other ingredients and mix well.
-Allow flavors to mix for 10 minutes and then spoon the fattoush into serving bowls.
-Drizzle with olive oil and season with salt & pepper.
-Garnish generously with sumac and a sprinkle of feta cheese.

Recipe (Re)creation: Gwyneth's Chicken Paillard




I am not a huge fan of chicken.  There are so many chicken recipes that are boring or bland so I'm usually turned off.  However, if I'm going to have chicken, there are three preparations I like: roasted chicken, chicken spiedini, and chicken paillard.  Of the three, chicken paillard is by far the easiest and it  is so juicy and delicious.  I based this recipe on a recipe that Gwyneth Paltrow shared on her blog GOOP.  Its beautiful in its simplicity and the flavors are all clean and pair with one another seamlessly.  I served the chicken over a simple arugula salad with shaved pecorino, sliced cherry tomatoes, olive oil and a squeeze of lemon.  Its a perfect little one-dish wonder and literally takes 5 minutes to cook!

Ingredients:

  • 2 chicken breasts
  • 1 tablespoon flour
  • Olive oil
  • 1/2 lemon
  • Salt & pepper 

Directions:

Place the chicken breasts between two sheets of parchment paper or saran wrap.  

Pound the cutlets with a heavy pan until they are about 1/4 inch thick.  

Season both sides of the cutlets with salt, pepper, and a small amount of flour.

Coat the surface of a skillet with olive oil and put on medium to high heat. 

Cook each chicken breast for 2-3 minutes on each side.  

The skin should start to crisp up and brown but the inside should be tender and juicy.  

Serve over a a simple arugula salad (see above).

Simply delicious!

Restaurant (Re)creation: Pomelo's Brussels Sprout and Butternut Squash Panzanella Salad





Holy Yummmmm!  I ordered a salad like this for brunch at a little spot in Noe Valley called Pomelo and have been dying to (re)create it ever since.  I loosely based my version on this recipe, but I roasted everything together, topped it with bacon and pecorino cheese, and drizzled it with balsamic reduction.  When I made it for the first time, I DEVOURED it.  Literally, I could not stop.  This dish makes me very very happy.  Its like seasonal winter comfort food.  I could eat it for breakfast, lunch, or dinner DAILY!

Serves 4

Ingredients:

For croutons:
  • Olive oil
  • 5 cups cubed ciabatta
  • 3 tsp chopped garlic
  • 2 tsp thyme
  • 4 tbsp finely grated parmesan
  • Salt & pepper

For salad:
  • 4 cups butternut squash, cubed
  • 1 lb brussels sprouts, quartered
  • 1 cup cremini mushrooms, halved
  • 1 small red onion, sliced thinly
  • 3 tbsp sherry vinegar
  • 1 tbsp chopped fresh sage
  • 1/4 cup Italian parley leaves, chopped
  • 4 strips bacon (regular or turkey)
  • Salt & pepper
  • Olive oil

Optional:
  • Shaved Pecorino
  • Balsamic Drizzle

Directions:

Preheat oven to 450 degrees F.

Mix bread, olive oil, garlic, thyme and parmesan and place on a baking sheet.

Season with salt and pepper and bake croutons for 10-12 minutes, or until crispy.  Set aside to cool.

Soak the sliced onion in  sherry vinegar and a pinch of salt.

Mix the squash, brussels sprouts, mushrooms and sage with olive oil and place on a baking sheet. Season with salt and pepper.

Roast for 20-25 minutes, or until the brussels sprouts are lightly browned and the squash starts to caramelize.

Add 1/2 cup olive oil to the onions and sherry and season with salt and pepper.

In a large bowl, combine the croutons, squash, brussels sprouts and mushrooms.  Drizzle with vinaigrette and top with chopped parsley.

Garnish with Pecorino cheese and balsamic drizzle.

Eat up!

Restaurant (Re)creation: Kokkari's Grilled Lamb Chops and Roasted Potatoes

If you know kiwis (like my husband), you know they love their lamb.  I was racking my brain for the perfect dish to serve on Valentine's Day and then it came to me: grilled lamb and potatoes!  (I mean, what guy wouldn't love that combo?)  Kokkari is very well known for their lamb so I decided to use a recipe from the Kokkari Cookbook that I recently bought.  This recipe is simple and requires very little time.  While it may look like a lot of ingredients, many are repeated in each preparation, so you don't have to buy very many items.  Perfect for a weeknight Valentine's Day meal.  (And yes, the kiwi thoroughly enjoyed it).

Serves 4 (generously)

Ingredients for lamb: 
  • 2 8-rib racks of lamb, trimmed and cut into single rib chops
  • 2 tsp garlic powder
  • 1/2 tsp freshly ground pepper
  • 2 tsp dried oregano, crumbled
  • 2 tablespoons olive oil
  • Sea salt
  • 2 lemons, cut in wedges
  • Fresh Oregano springs for garnish, optional

Ingredients for potatoes:
  • 3 large Yukon Gold potatoes, each peeled and cut lengthwise into 6 wedges
  • 4 tablespoons extra-virgin olive oil
  • 1/2 tsp dried oregano
  • 1/4 cup fresh lemon juice
  • Sea salt and ground pepper

Ingredients for Kokkari Dressing:
  • 6 tbsp extra-virgin olive oil
  • 2 tbsp fresh lemon juice
  • 2 tsp capers, rinsed and minced
  • 2 tsp minced shallets
  • 1 tsp minced garlic
  • 1 tsp minced flat-leaf parsley
  • 1/2 tsp chopped fresh oregano 
  • 1/4 tsp dried oregano
  • Sea salt and fresh ground pepper
  • (Optional: bunch of arugula)

Directions:

Preheat the oven to 450 degrees F.  

Put the potatoes wedges in a large bowl and toss thoroughly with olive oil, oregano, salt and pepper.  

Arrange the wedges in one layer a non-reactive baking dish.

Drizzle with lemon juice and 1/2 cup of water around (not on) the potatoes.

Bake for 20 minutes, then rotate the pan and bake for another 20 minutes (or until potatoes are browned and the water has evaporated.  

Remove from heat and let cool for at least 15 minutes.

Meanwhile, preheat grill on high (for lamb).

Put the lamb chops on a work surface and pound with your fist until it is evenly thick.  

Combine the garlic powder, pepper, and oregano in a small bowl.  

Press the seasoning blend on both sides of the meat, including the meat on the bones.  

Before grilling, drizzle olive oil on the seasoned chops, using your fingers to coat the meat evenly.  Season with salt.

Grill the chops, turning once, for about 3 minutes on each side (for medium rare). 

While the chops are cooking, whisk together the dressing ingredients.

Squeeze 2 lemon halves over the chops before taking them off the grill.

Serve the chops hot with a side of potatoes and a bunch of arugula (optional), all drizzled with dressing.

Garnish with lemon wedges and oregano sprigs.

Restaurant (Re)creation: Delfina's Spicy Cauliflower






This dish is a favorite at Pizzeria Delfina.  Its unique, spicy, crunchy and satisfying.  I actually found the real recipe from an SFGate article online (which is totally delicious as is), but I decided to do a somewhat "lighter" version.  I used all the same ingredients as Delfina's version, but I omitted the Calabrese peppers and I roasted the cauliflower first to minimize "frying" time.  This may go against the goal of most of my (re)creations since it adds time to the preparation, but I would rather add minutes to the cook time than inches to the waistline!  (I mean seriously, if a girl is going to eat like this most nights, she needs to make a few tweaks here and there to keep her pants fitting ; ).  So, I roasted the cauliflower (rather than deep frying it) and then just finished it off on the stovetop.  It tastes almost exactly the same as the restaurant version and only takes a little more time.  Try the recipe either way- both are perfectly delicious and flavorful.

Serves 4 (as a side)

Ingredients:

1 head of cauliflower, broken into florets
Extra-virgin olive oil
Salt, to taste
1/4 cup chopped italian parsley
1/4 cup drained capers, dried
2 large garlic cloves, sliced thinly (lengthwise)
1 tsp chili flakes
1 tbsp panko breadcrumbs

Directions:

Preheat the oven to 400 degrees F.

Separate the cauliflower into large uniformly-sized florets.

Place the cauliflower in an oven and stove-top safe pan and douse in olive oil and salt.  Mix the cauliflower around so that the salt and olive oil are evenly distributed.

Roast the cauliflower for 25-30 minutes or until it starts to soften and brown.

Once the cauliflower starts to brown, remove it from the oven and place it on the stovetop on medium heat.  Cook for 5-7 minutes.

Add a little more oil (as needed) and the capers, garlic, and breadcrumbs.  Cook for 1-2 more minutes, adding the chili flakes at the end.

Remove from heat and serve.
