Recipe Creation: Crunchy Grain Free Granola





I sit here with a handful of granola as I write this because it is just so darn good. I CANNOT STOP.  I don't feel too guilty about my newfound obsession since it is chock-full of healthy fats, fiber and protein. It's also amazing, so who really cares about the health stuff when it tastes this good. It's delicious sprinkled on top of chia pudding, yogurt, toast with almond butter, ice cream, you name it! It's also perfect the way I am eating it right now- by the handful ; )

Makes roughly 3.5 cups

Ingredients:

  • 1/2 cup pepitas
  • 1/2 cup coconut flakes
  • 1 cup slivered almonds
  • 1 cup raw pecans, roughly chopped
  • 1 cup raw walnuts, roughly chopped
  • 4 tbsp. chia seeds
  • 1 tsp. cinnamon
  • 1/4 tsp. sea salt
  • 3 tbsp. coconut oil
  • 1/4 cup maple syrup

Directions:

-Preheat oven to 325 F and line a baking sheet with tin foil. 
-Combine the dry ingredients in a mixing bowl.
-Heat the coconut oil and maple syrup together in a small saucepan and stir. 
-Pour over the dry ingredients and mix around. 
-Spread the mixture on the baking sheet in a thin layer.
-Bake for 25-30 minutes or until the granola begins to turn golden brown and crispy. 
-Remove from oven and let cool completely.
-Store in a mason jar and enjoy!

Recipe (Re)creation: Banana + Walnut + Chocolate Chip Muffins




 
I have been baking more and more lately and I think it's because I like having something that I can grab on the go with a baby in tow. I love to have homemade muffins on hand because they are the perfect treat for breakfast or as an anytime snack.  These muffins are a rough variation of a recipe from Gwyneth Paltrow's cookbook, It's All Good.  Rather than following her recipe as written, I decided to use a combination of whole wheat and white flour and added walnuts and chocolate chips instead of the dates and pumpkin seeds.  The combination of bananas, walnuts and chocolate chips is simply divine.  If you like banana bread, you are going to fall head over heels for these muffins.

Makes 12 muffins

Ingredients:
  • 1 cup white flour
  • 1 cup whole wheat flour
  • 2 tsp. baking powder
  • 2 tsp. baking soda
  • A pinch of kosher salt
  • 2 ripe bananas, mashed
  • 1/2 cup extra virgin olive oil
  • 1/2 cup maple syrup
  • 2/3 cup milk
  • 2 tsp. vanilla extract
  • 1/8 cup mini dark chocolate chips
  • 1/4 cup chopped walnuts, plus 3 tbsp. for the tops

Directions:

-Preheat oven to 400 degrees F and line muffin tin with paper liners.
-Mix together the flour, baking powder, baking soda and salt in a bowl.
-In another bowl, whisk together the olive oil, maple syrup, milk, vanilla and bananas.
-Combine the wet and dry ingredients and toss in 1/4 cup of walnuts and the chocolate chips.
-Scoop the batter evenly into the muffin cups and sprinkle more walnuts on each.
-Bake for 20-22 minutes, or until the tops of the muffins are lightly golden.

Recipe Creation: Balsamic Roasted Butternut Squash + Brussels Sprout Quinoa



Ahhh, fall has arrived and with it, my favorite produce!  I love hearty squashes & root vegetables and I love that all they need is a hot oven and some olive oil for their best flavors to come out.  This dish can be eaten as a main dish since it has the protein rich quinoa, or it can be served as a side.  For me, it is the perfect weeknight meal on a chilly night.  Keep this one bookmarked as a great option for a Thanksgiving side too.

Serves 2 (as a main)
Serves 4-6 (as a side)

Ingredients:

  • 1 lb cubed butternut squash
  • 3/4 lb brussels sprouts, trimmed and halved
  • 1/2 cup dried red or rainbow quinoa
  • 1 cup water
  • 1/3 cup chopped walnuts
  • 1/4 cup dried currants
  • 1/4 cup grated Truffle Pecorino (or Parmesan)
  • 1/3 cup balsamic vinegar
  • 2 tbsp olive oil
  • 1 tbsp honey
  • Salt & pepper

Directions:

-Preheat oven to 450 degree F.
-Line a baking sheet with tin foil and add squash and brussels sprouts.
-Drizzle with olive oil and season with salt and pepper.
-Roast in the oven for about 25 minutes, or until cooked through.
-Meanwhile, heat a saucepan over medium heat and add the water and quinoa.
-Simmer for about 20 minutes, or as directed on the box.
-Whisk together the balsamic, olive oil and honey.
-Transfer the quinoa, squash, and brussels sprouts to a large bowl.
-Toss with the balsamic dressing, currants, and chopped walnuts.
-Liberally sprinkle freshly grated truffle pecorino on top.

Restaurant (Re)creation: Nopa's Corn Soup with Walnut Pesto


I found this recipe in The Bay Area Homegrown Cookbook by Aaron French, which features tons of great recipes from local bay area chefs.  Nopa happens to be one of my favorite spots and I have yet to have a bad meal there.  Chef Laurence Jossel generously shared this corn soup recipe in French's cookbook and I couldn't be happier.  The only thing I did differently is I didn't strain the soup through a colander and instead opted for a thicker consistency.  Either way, the flavor combinations are dynamite.  Take advantage of this recipe now while corn is in season and readily available at the farmers' market.  Enjoy!

Ingredients:

For the soup:

  • 3 medium yellow onions, diced medium
  • 1/2 clove garlic, sliced
  • 1 jalapeño
  • 2-3 tbsp. olive oil
  • 12 basil leaves
  • 10 ears corn
  • 1 cup cream
  • salt, to taste
  • water, as needed

For the walnut pesto:

  • 1/2 cup shelled walnuts
  • 1 clove garlic
  • 3 tbsp grated parmesan
  • 1/2 cup extra virgin olive oil
  • 10 fresh basil leaves
  • salt and pepper, to taste

Directions:

For the soup: 

-Gently sweat the onions, garlic, and jalapeno in the olive oil until onions are translucent, about 15 min.
-Season lightly with salt and add the corn, cream, and enough water to cover.  
-Simmer slowly for 20 minutes.  
-Puree the soup and strain through a large-holed colander.  
-Adjust seasoning and serve with a dollop of walnut pesto garnish and basil leaves.

For the walnut pesto:

-Combine all ingredients except the basil in a food processor and puree until smooth.  
-Add the basil and puree quickly, keeping in mind that the basil will turn brown if blended more than necessary. 
-Stir in salt and pepper to taste.
