Recipe (Re)creation: Hearty Fall Salad





I know what you are thinking. If this is a salad, where are the greens?  It's not that kinda salad.  This is a grain salad, rather than a green salad. It's perfect for fall, very hearty, and comforting.  It also happens to be gluten free and full of nutrients (fiber, protein, beta-carotene, vitamin b + c, etc).  I like to double the recipe so I have leftovers during the week.  If you are going to keep some for later, just store the dressing separately. Feel free to play around with the ingredients and substitute different root vegetable or grains if you prefer. Enjoy!

Serves 3

Ingredients:

For the salad:

  • 1 large sweet potato 
  • 1 head of cauliflower
  • 4 organic chicken apple sausage
  • 1 cup cooked quinoa
  • 1 tbsp. olive oil
  • 1 tsp. dried rosemary
  • 1 tsp. dried thyme

For the dressing:

  • 1 cup Italian parsley, minced
  • 2/3 cup olive oil
  • 1 clove garlic, minced
  • 1 lemon, juiced
  • 1 tsp. agave or honey
  • salt & pepper, to taste

Directions:

-Preheat the oven to 425 degrees F. and line a baking sheet with tin foil.
-Peel and chop the sweet potato and and cut the cauliflower into small florets. 
-Slice the sausage in 1/2 inches rounds and toss with the veggies. 
-Drizzle with olive oil, season with salt & pepper and top with herbs.
-Roast for 20 minutes, then stir and return to the oven for another 10 minutes. 
-Remove from oven when golden brown and set aside. 
-Meanwhile, toss all of the dressing ingredients into a jar and shake to combine.
-Mix the precooked quinoa in a large bowl with the roasted veggies and sausage.
-Toss with dressing and season with salt and pepper.

Recipe (Re)creation: Quiche Lorraine






I've been meaning to do this post all week, but with a newborn it has been increasingly more difficult to steal away and cook, let alone write about it.  Luckily, this afternoon I got a nice little window during Declan's nap time to make this classic french dish.  I actually begged for the recipe after a French friend brought it over for dinner and it quickly disappeared.  I figured it would be the perfect thing to make ahead and have as leftovers during the week.  I made a few changes to his recipe because I didn't have the exact quantities of some of the ingredients, but it turned out just as tasty.  Bon Appétit!

Serves 4

Ingredients:

  • 1 pastry circle 
  • 3 eggs
  • 2 -3 oz. pancetta, diced
  • 5 oz. créme fraiche
  • 8 oz. whole or 2% milk 
  • 1 oz. gruyere cheese
  • Pepper

Directions:

- Preheat oven to 425º F and take pastry circle out of the freezer to thaw.
- Place the pastry in a pie dish and press the edges down so it molds to the dish.
- Cook the pancetta in a skillet until lightly browned (5-10 minutes).
- Mix the eggs, créme fraiche, milk and cheese in a bowl.
- Place the cooked pancetta on the pastry and pour in the other mixed ingredients.
- Top with ground pepper (no need to add salt).
- Place the dish in the oven and bake for 35-45 minutes, or until cooked through.

Recipe (Re)creation: Shaved Asparagus Pizza





I had this pizza at my friend Ashley's house and have been dreaming about it ever since.  Luckily, she was was so kind as to share the recipe with me.  The shaved asparagus lends a delicate grassy flavor and the green onions add a little bite, all atop of cheesy chewy pizza crust.  It is pretty darn close to perfect.  This does not surprise me since the recipe comes from Barefoot Contessa herself.  I even played around with the original and added chicken apple sausage to a version and it was delicious. The recipe is easily adaptable and a guaranteed crowd-pleaser.  You're just going to have to trust me on this one.

Makes 1 10-12 inch pizza

Ingredients:

  • 12 spears of asparagus
  • 1/4 cup grated parmesan
  • 14 oz. pizza dough
  • 3/4 cup shredded mozzarella
  • 2 teaspoons olive oil
  • 1 scallion, thinly sliced
  • Kosher salt & pepper

Directions:

-Preheat oven to 500 degrees F.
-Wash and dry asparagus and set aside a medium bowl.
-Hold each asparagus by the base and shave from base to tip with a vegetable peeler.
-Toss shaved asparagus with olive oil, salt, and pepper and set aside.
-Meanwhile, roll out or stretch the pizza dough to about 10-12 inches.
-Place dough on a pizza stone or floured baking sheet.
-Top with 1/4 cup grated cheese, followed by the shredded mozzarella.
-Evenly distribute the shaved asparagus on top and place in the oven.
-Bake for 10-12 minutes, or until cooked through and golden on the edges.
-Remove from oven, sprinkle with sliced scallions, and slice in wedges.
-Serve immediately.

Recipe Creation: Kale + Quinoa Pilaf with Sautéed Chanterelles




This dish combines all of my favorite foods AND it's super healthy and satisfying.  I can rarely convince my husband to do a vegetarian dinner, but he is more than happy to eat this dish on its own any day of the week.  The lemon adds a nice zesty flavor and the goat cheese balances out the acidity of the dish.  Top it with some buttery sautéed chanterelles and you have yourself a restaurant worthy meal.  This is my version of a happy meal.  Kinda makes me want to hum when I eat it...

Adapted from Food 52

Serves 2-4

Ingredients:

  • 2 cups water
  • 1 cup rainbow quinoa
  • 1 bunch kale, ribs removed + roughly torn
  • 3 green onions, finely chopped
  • 1/3 cup goat cheese
  • 3 tbsp toasted pine nuts
  • 1 tbsp hazelnut oil
  • 1 lemon, zested and juiced
  • 1 cup chanterelles, sliced
  • 1 tbsp butter
  • salt & pepper, to taste

Directions:

-Bring the water to boil in a medium saucepan with a lid.
-Add the quinoa and simmer over low heat for about 10 minutes.
-Add the kale and let steam for an additional 5-10 minutes.
-Meanwhile, heat a small skillet on medium heat and add the butter.
-Sauté the chanterelles for about 10 minutes, or until lightly browned & cooked through.
-Mix the green onions, goat cheese, pine nuts, oil, lemon juice & zest in a large bowl.
-Scoop in the cooked quinoa and kale and mix thoroughly.
-Top with chanterelles and season with salt & pepper.

Recipe (Re)creation: Crispy Brown Sugar Salmon





If you are anything like me, this salmon will quickly become a bi-weekly staple (at the least).  My dear friend and food blogger for Pink Brandywine introduced me to this preparation and I haven't looked back.  Honestly, even the salmon skeptical (like my husband) love this dish!  The key to this recipe is you have to plan ahead a bit.  Ideally, you want to get your salmon the day before, so you can marinate it overnight.  If that isn't in the cards for you, then at least try to marinate it for 2-4 hours before you start cooking it.  The best part about this dish is it tastes buttery, sinful, and delicious, but it is INCREDIBLY healthy.  I would call that a win.

Serves 2

Ingredients

  • 3/4 lb- 1 lb salmon fillet
  • 3-4 tbsp soy sauce
  • 1 tbsp mirin rice cooking wine
  • 2 tsp vegetable oil
  • 1 tbsp brown sugar
  • freshly ground pepper

Directions

-Preheat oven to 400 F. 
-Place salmon in a zip-lock bag or tupperware container.
-Pour in the soy sauce and mirin and mix around so the salmon is evenly coated.
-Marinate in the fridge overnight (or 2 hours at the minimum)
-Remove salmon from the fridge & brush off some of the marinade with a paper towel.
-Place salmon on a foil lined baking tray or dish.
-Pour the vegetable oil on the salmon and sprinkle with brown sugar.
-Top with a few twists of ground pepper.
-Place salmon in the preheated oven.
-Bake for 10-12 minutes, or until the salmon is crispy and tender.
-Serve immediately!

Recipe (Re)creation: Chard, Leek, Corn + Manchego Flatbread



This will be my last corn addition for the season- I'm just thrilled I keep finding it! This recipe is partially inspired by my favorite flatbread dish at Contigo, and partially inspired by a recipe from Smitten Kitchen.  One of my favorite things about Contigo is that they ALWAYS have a flatbread on the menu and it always has manchego cheese on it.  The fun part is, they add a new seasonal ingredient on top, so its a surprise every week.  I just got leeks and rainbow chard in my Albert & Eve delivery, so I decided to combine them (and add corn, of course).  In order to make it "weekday friendly," I cheated and used tortillas instead of making pizza dough, but it created the perfect crispy flatbread that I have been seeking. The result- OMG, this might be my favorite flatbread combination!  I know that is a bold statement, but you'll have to try it yourself to prove me wrong.  Take that as a challenge.

Serves 4

Ingredients:

  • 3 leeks, stalks removed
  • 1 bunch rainbow chard
  • 1 ear of corn, cut off the cob
  • 4 whole wheat tortillas 
  • 3/4 cup freshly shaved manchego
  • 1/2 cup crumbled goat cheese
  • Salt & Pepper
  • Olive oil

Directions:

-Preheat oven to 450 degree F.
-Cut the green stalks off the leeks, and cut the remaining white parts lengthwise.
-Next, cut those halves in 1/2 inch rounds.
-Soak leek slices in cold water to remove dirt and scoop them out onto a paper towel to dry.
-Wash and dry chard and cut into 1/2 inch ribbons.
-Heat a medium skillet over low heat and add 1 tbsp. olive oil.
-Toss in leeks and cover.  Cook, stirring occasionally, for about 10 minutes.
-Add the chard and cook until the chard is tender.
-Next, add the corn and cook for 1-2 minutes.
-Season with salt & pepper.
-Meanwhile, brush tortillas with a scant amount of olive oil and place on a baking sheet.
-Sprinkle tortillas with manchego cheese shavings.
-Spoon the corn, leek, and chard mixture on the tortillas.
-Top with crumbled goat cheese and place in the oven.
-Cook for about 10 minutes, or until the tortillas begin to brown and the cheese melts.
-Serve immediately.

*Any extra chard, leek & corn mixture makes for an excellent side dish*

Recipe (Re)creation: Fried Egg and Avocado Pita


This is what I would consider a weekend creation that is easy enough for a weekday and perfect for breakfast, lunch, or dinner.  It's sort of like the all-purpose meal and is the ultimate comfort food.  It was inspired by an avocado that was sitting in our fruit bowl looking perfectly ripe and ready to eat.  It was given to my husband by a coworker whose family has an avocado farm, so I knew this was going to be amazingly fresh and I wanted to put it to good use.  While scouring recipes and ideas, I came across this one on What Gaby's Cooking. I just tweaked the quantities and proportions a bit and it was an instant hit.  The citrusy smashed avocado blends perfectly with the creamy yolk, and the best part is: it can all be sopped up with the pita.  One bite of this takes me straight to my happy place- whether it's the weekend or not.

Ingredients:
  • 1 small ripe avocado
  • 1/4 of a lemon
  • 2 fresh eggs
  • 2 pitas
  • salt & pepper

Directions:

-In a bowl, mash the avocado until it is fairly smooth.  
-Squeeze with a little bit of lemon and season with salt and pepper.
-Meanwhile, heat up pitas, either in the oven or in a toaster.
-Heat a non-stick skillet over medium low heat.
-Crack an egg into a cup and gently pour into the skillet.  
-Cook until whites are set and the edges of the egg start to brown.
-Repeat with the second egg and set aside.
-Spread each warmed pita with avocado, and top with a fried egg.
-Season with salt and pepper.

*Optional- for an added kick, top with hot sauce or red chili flakes.

Recipe Creation: Grilled Fig, Peach + Goat Cheese Pizza




This recipe is easy, seasonal, and perfect for a warm evening when you want to get out and take advantage of your grill (or someone else's).  You can throw on any of your favorite ingredients and change it based on whatever is in season, or happens to be in your fridge.  I use pita bread as the crust because it makes nice individual pizzas, but you can also use pre-made or homemade pizza dough.  If you are like me though, making homemade pizza dough after work is not in the cards.  You can take this concept on the road too, and have a little "pizza bar" and your guests can make their own personal pizzas with different toppings.   The possibilities are endless...

Serves 2

Ingredients:

  • 2 pitas (whole wheat or white)
  • 1/2 cup part-skim ricotta
  • 1/4 cup crumbled goat cheese
  • 4 figs, sliced thinly
  • 1 peach, cut in quarters and sliced thinly
  • 1/4 shallot or red onion, sliced thinly
  • Olive oil
  • Salt and pepper to taste


Directions:

-Preheat grill on medium-high heat.

-Meanwhile, sauté shallots in olive oil until translucent and slightly crispy.

-Remove shallots from heat and set aside.

-Spread about 1/4 cup ricotta on each pita and top with sliced figs and peaches.

-Sprinkle with crumbled goat cheese.

-Place pita pizzas on the grill and cover.

-Grill pizzas for 10-15 minutes, or until the pita begins to crisp and the cheese begins to melt.

-Top with crispy shallots, and season with salt and pepper.
